Love meat loaf

    I love love my wifes meatloaf @big daddys ol lady
    I also LOVE bacon.
    I combined the 2. Turned out pretty good.

    Okay, now that is better than what I thought this thread was going to be about when I saw it in the sidebar. I thought you were going to say you love Meatloaf the singer and I was going to post that he is one singer I never understood. My opinion, what he does can't be called singing.

    I put shredded cheese, JalapeƱos, onions in my burgers my kids love that, imma have to try that in the meatloaf. Thnx for the idea

    That meatloaf sounds good but also looks really great!!!!! I'm not a plain meatloaf fan and am not crazy about ketchup - but the BACON!

    I occasionally make the meatloaf my mom made for us. Simple but good.

    - Meat mixture, patted out on waxed paper into a rectangle with long sides to fit whatever pan you use. I just do the regular meat/breadcrumb/egg type mixture but you probably all have a favorite.

    - sprinkle with herbs; oregano, basil, some finely minced garlic (or you can add the garlic to the meat mixture) - or whatever you want.

    - layer on very thinly sliced ham

    - layer on thinly sliced mozzarella (could use grated if it's the grate-able kind)

    - roll up length-wise to fit your pan, sealing the edge and placing edge toward bottom of pan. Bake loosely covered, then remove cover toward second half of cooking if more browning is desired.

    It looks really nice when it is cut, with the spiral.

    That sounds really good, but when you say roll up... do you mean roll the meat in the wax paper? Or do you mean prepare the meat as a sort of sheet and then spread the herbs and cheese on it and then roll the meat around the herbs and cheese? I'm thinking the latter, but sometimes my brain doesn't quite work right... :oops:

    Exactly- the waxed paper helps lift it to roll it, then is tossed.
